Ask any of your friends what their favourite kitchen equipment is and we're betting that most of them will say the humble air fryer. It holds its place for making dinner quickly and easily because after long days chasing bank, the last thing we want is to spend hours and hours in the kitchen but we still want something healthy. Here are our go to air fryer recipes.

Roast Chicken and Vegetables

Ingredients:

  • 200g chicken breast
  • 1 bag of pre-cut mixed vegetables (like bell peppers, zucchini, and carrots)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions:

  1. Preheat your air fryer to 190°C.
  2. Toss the chicken breast with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper.
  3. In another bowl, toss the mixed vegetables with the remaining olive oil, salt, and pepper.
  4. Place the chicken breast and vegetables in the air fryer basket.
  5. Cook for 15-20 minutes, shaking the basket halfway through, until the chicken is cooked through and the veggies are tender.
  6. Serve immediately.

Quick Salmon and Asparagus

Ingredients:

  • 2 salmon fillets
  • 1 bunch asparagus, trimmed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Pomegranate seeds, finely chopped onion and vinaigrette dressing for serving

Instructions:

  1. Preheat your air fryer to 200°C.
  2. Rub the salmon fillets with 1 tablespoon of olive oil, salt, and pepper.
  3. Toss the asparagus with the remaining olive oil, salt, and pepper.
  4. Place the salmon fillets and asparagus in the air fryer basket.
  5. Cook for 10-12 minutes, until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender.
  6. Serve with pomegranate seeds, finely chopped onion and vinaigrette dressing.

Onion Bahjis made healthy in the air fryer

Turkey Burgers

Ingredients:

  • 300g ground turkey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 whole-wheat burger buns
  • Toppings: lettuce, tomato, avocado, pickles, onion slices

Instructions:

  1. Preheat your air fryer to 190°C.
  2. In a bowl, mix the ground turkey with garlic powder, onion powder, salt, and pepper.
  3. Form the mixture into 2 patties.
  4. Place the patties in the air fryer basket.
  5. Cook for 10-12 minutes, flipping halfway through, until the burgers are cooked through.
  6. Serve on whole-wheat buns with your favourite toppings.

Vegetable Stuffed Quesadillas

Ingredients:

  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1 cup cut mixed vegetables (like tomatoes, courgette, bell peppers, onions, and spinach)
  • Olive oil spray

Instructions:

  1. Preheat your air fryer to 175°C.
  2. Sprinkle cheese evenly over one half of each tortilla, then add the mixed vegetables on top of the cheese.
  3. Fold the tortillas in half and lightly spray both sides with olive oil spray.
  4. Place the quesadillas in the air fryer basket.
  5. Cook for 5-7 minutes, flipping halfway through, until the tortillas are crispy and the cheese is melted.
  6. Cut into wedges and serve with salsa or guacamole.

Onion Bhajis with Yogurt Dip

Ingredients for Onion Bhajis:

  • 2 large onions, thinly sliced
  • 1 cup chickpea flour (gram flour)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon baking powder
  • Salt to taste
  • Water, as needed
  • Olive oil spray

Instructions for Onion Bhajis:

  1. Preheat your air fryer to 180°C.
  2. In a large bowl, mix the chickpea flour, cumin, coriander, turmeric, chili powder, baking powder, and salt.
  3. Add the sliced onions to the bowl and mix well.
  4. Gradually add water, a little at a time, until the mixture forms a thick batter that coats the onions.
  5. Form small balls or fritters with the mixture and place them in the air fryer basket.
  6. Lightly spray the bhajis with olive oil.
  7. Cook for 10-12 minutes, shaking the basket halfway through, until the bhajis are golden and crispy.

Ingredients for Yogurt Dip:

  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh mint or cilantro
  • Salt and pepper to taste

Instructions for Yogurt Dip:

  1. In a small bowl, mix the Greek yogurt, lemon juice, mint or cilantro, salt, and pepper.
  2. Serve the onion bhajis hot with the yogurt dip on the side.
